Introduction

For the last few decades, Cardiovascular diseases have been maintaining the position as the number one causes of death all around the globe. Issues with imbalanced diet or unhealthy lifestyle combined with genetic heritages can put anyone in the risk of CVD. There are drugs that can trigger fibrinolytic activity such as streptokinase and aspirin, but their side-effects are often quite serious and they may only serve as a temporary solution. This is why more natural solutions for CVD are often sought for, especially from food items. Fermented foods, such as Kimchi, are found to have rich bacterial-flora growth that are often beneficial for our body. The Indonesian Fusion Kimchi was made by using the terasi paste (an Indonesian fermented shrimp paste) for the base sauce instead of Korean traditional sauce, and its bacterial content was analyzed along with the traditional Kimchi to see if there were any bacteria that have fibrinolytic properties. Several bacteria were isolated and identified using Proteolytic inoculation on Skim milk agar, Gram staining, catalase testing, and endospore staining. A total of 7 isolates were identified, 6 gram positive and 1 gram negative, and their possible genus was deduced. Then their fibrinolytic activities were tested via Whole blood system testing, and their results were analyzed via spectrophotometry, and visual observation. The analysis revealed that although all isolates have fibrinolytic activity, 3 of them has the highest potential.

Result and Conlusion

The microorganisms in both Indonesian fusion Kimchi and traditional Korean Kimchi that were selected and isolated has shown to have fibrinolytic activity according to the in vitro clot lysis results. There were 3 specific isolates – T3b, T4, T1 – that showed stronger fibrinolytic activity than the positive control (nattokinase, an enzyme previously established to have fibrinolytic abilities) according to the spectrophotometry analysis. The identification process allowed the assumptions to be made on their possible genus: -T3B : Corynebacterium -T4: Bacillus -T1: Corynebacterium
